The Zerlo of Noli is a small fish (Picarel) that is part of the traditional Liguria fish cuisine. They are caught in the Gulf of Noli. After they have been fished and cleaned, they are stored in the scabècciu, i.e. they are dried and then fried without flour and placed in glass jars with bay leaves.
The Zerlo can be tasted marinated with oil and lemon.
