The white beans (Phaseolus vulgaris) are present in inland areas of the provinces of Savona and Imperia, but those produced in the areas of Badalucco, Conio and Pigna, in the Imperia region, are particularly well known and appreciated.
When ripen, the seeds are white with ivory or cream nuances; the shape is roundish to slightly elongated, they are 1-1.3 cm long and 0.7-0.9 cm wide.
The origin of beans of Conio, Badalucco and Pigna, locally called Rundìn dell’Angelo, is uncertain origin, perhaps from Piedmont. Renowned for decades in the area for the most important dishes based on legumes, they have a local market. They are characterized by a very delicate taste and very thin skin that, especially in soups and after long cooking, tends to fall apart and disappear.
