The fava bean pesto sauce is a simple preparation typical of the spring season, as fresh fava beans are only available during this period of the year.
This sauce is used to season meat or fish. It has ancient origins and the legend says it was invented by Saracens.
150 g of fava beans
1 clove of garlic
75 g of pecorino cheese
4 mint leaves
70 ml of extra-virgin olive oil
Start the preparation by cleaning the fava beans, removing them from the pod and removing the outer part of each fava bean.
Then pour the fava beans in a mixer, together with the garlic clove, the previously grated cheese and the mint leaves.
Stop the mixer once you have obtained a homogeneous and creamy mixture. Add EVO oil: serve the fava bean pesto as an accompaniment to meat or fish dishes or spread it on croutons.
