An excellent artichoke, imported from neighboring Provence and acclimatized well in this area. This is the French “violet”. The artichoke of Perinaldo is grown exclusively in this area and in Provence: its main peculiarity is that it has no thorns, with a tender heart, it has no beards inside. It is harvested from May to June. People of Perinaldo are very jealous of this product, more unique than rare and that is perhaps why Perinaldo’s violet artichoke is grown only in this small town and not in the neighboring villages. It can be eaten raw, in salads, or cooked to accompany meat or game. The typical dishes of Perinaldo see it as the protagonist of omelets, baked with parmesan and mushrooms, or in simple fritters with garlic and parsley.
