A food particularly suitable for the rural life of witches, today they are a specialty of Molini di Triora, where every year in September the Snail Festival takes place.
1 kg well washed snails
½ l of extra-virgin olive oil
Crumb of 2 sandwiches
1 l of red wine
Beef broth
½ head of garlic
1 onion
Salt and pepper to taste
Red wine vinegar to taste
Flavours (parsley, laurel, wild mint, rosemary, thyme)
Start the preparation by putting the oil in a large earthenware pot and add snails and herbs as soon as it is heated.
Cook for about 20 minutes on high heat, stirring occasionally and then cover the snails with red wine, add salt and pepper to taste. Let the wine evaporate and cover them with the stock. At this point, lower the heat and cook for a couple of hours. When cooked, add the crumb soaked in red wine vinegar and chopped mint and parsley. Stir the stew and serve it hot!
