Fruit of the untiring work of the bee, honey is one of the most genuine products ever; no need for special processing and it is immediately ready to go from the hands of the producer to the table of the consumer.
There are several varieties of honeys produced here: particularly, in the hinterland of Val d’Aveto, the classic chestnut and acacia honey are renowned, but also the most particular heather and strawberry tree honey and of course the mixed-flower variety.
The organoleptic characteristics of honey vary according to the melliferous flora collected by bees: the color of acacia honey, for example, is light yellow, while that derived from chestnut is amber. Mixed-flower honey varies from light to dark shades depending on the presence of honeydew. The same applies to fragrance and taste: chestnut honey tends to be more bitter than the acacia or mixed-flower ones.
