Cubaita

Cubaita is an ancient and crunchy dessert, typical especially of Triora and Apricale. It is a sweet of Arabic origin: it consists of two hosts made with little flour, water and egg white, stuffed with a brittle of hazelnuts, almonds and walnuts.

Ingredients

Chestnut honey, to taste
100 g of walnuts
100 g of hazelnuts
100 g of almonds
Peel of 1 orange
Hosts (possibly round)

Preparation

Heat, mixing assiduously, the honey in a saucepan over a moderate flame with a tablespoon of water: as soon as it begins to foam add the dried fruit, previously toasted in the oven for 15 minutes at 150 °C and beaten so as to obtain a coarse mince. Add the orange peel, cleaned of the white part and finely chopped. Turn off the heat and place a teaspoon of mixture on a host, close with a second host and put a light weight on it so that it flattens.
