Brugnato’s canestrello, soft and brown off, differs from the classic canestrelli not for the donut shape but for the dimensions, the consistency and the ingredients, among which honey and anise seeds, which give it a particular taste. It is the pride of this ancient center, mentioned with the title of city as far back as 999, as attested by an imperial diploma.
