Anchovy and pine nut Linguine

Anchovies are among the most common fish and dishes prepared with such fish, in the Savona area, are often considered poor cooking; Yet characteristic salty taste makes it suitable for every course, from appetizer to main dish.
This is the recipe for anchovy and pine nut linguine.

Ingredients

Anchovies
Pine nuts
Sultanas
Garlic
Parsley
Fresh tomatoes
Tomato sauce
Chilli peppers
Extra virgin olive oil
White wine
Linguine

Preparation

Put some oil in a pan and heat it. Then cut the anchovies in pieces.
As soon as they start to sizzle, add garlic and parsley and simmer with white wine until reduced.
Then add fresh tomatoes and tomato sauce.
Once it is thickened, remove the sauce from the fire.
Proceed with the linguine cooking, and then after having drained it, add the sauce. Sprinkle with pine nuts, finely chopped parsley and a pinch of chilli pepper.
