Turtelin or Turta Verde is a very nourishing savory pie. Rice, a basic ingredient, is mixed with cabbage and dried sheep’s cheese, enriched with plenty of oil.
300 g of brown rice
600 g of milk
30 g of flour
2 tablespoons of oil
150 g of cheese
600 g of cabbage
Salt and pepper to taste.
Breadcrumbs (for gratin).
Boil rice and cabbage in two separate pots, both in salted water.
Meanwhile, prepare the béchamel with oil, milk and flour.
Drain rice and cabbage and add them to the béchamel in a sauce dish with about half the cheese.
Spread the remaining cheese and sprinkle the surface with the breadcrumbs.
Put in hot oven for about 20 minutes until a brown crust has formed.
