Zemin

Zemin is a vegetable soup with a prevalence of chickpeas, dried beans and chards, typically prepared during the winter in Ligurian hinterland; it is cooked for hours on low heat.
Everything is seasoned with pork rinds and salted legs.

Ingredients

400 g of chickpeas
1 onion
1 clove of garlic
1 stalk of celery
3 fresh tomatoes
500 g of chards
Pork rinds
Dried mushrooms

Preparation

Soak the dried mushrooms in boiling water.
Boil the chickpeas for about 1 hour in boiling water. In the meantime, take a fairly-high saucepan and fry the oil with garlic, onion and celery. Peel the tomatoes, add them to the chards and cut them finely, then add them to the sautéed vegetables in the pan. Add the chickpeas to the vegetables in the pan and after 10 minutes and the cooking water, mix everything and add the pork rinds and dried mushrooms, cut into small pieces. Serve them hot with a sprinkling of grated cheese.
