Torcetti are small crumbly and fried biscuits, widespread throughout the Val Bormida, especially in Mallare. They are presented as small, slightly alcoholic donuts.
250 g of flour
100 g of sugar
100 g of butter
1 tablespoon of rum
2 eggs
8 g of yeast
Grated lemon peel
Start by whisk sugar with the eggs; then add Rum, lemon peel and butter at room temperature.
Sift the flour with yeast into a bowl and add the other ingredients. Knead everything, and from the dough obtained make breadsticks thick like a finger and about 5 cm long. Cross them to form a donut and finally fry them in plenty of boiling oil.
