Lavender cookies

Typical sweets with a delicate taste and definitely out of the ordinary are the lavender biscuits, typical products of the village of Lingueglietta, to be served with tea and herbal teas.

Ingredients

170 g of flour
100 g of butter at room temperature
100 g of sugar
1 egg
1 teaspoon of lavender flowers
1 teaspoon of yeast
1 pinch of salt

Preparation

First, proceed by whisking the egg and mixing it with sugar and butter at room temperature.
Sift together flour, yeast and salt and knead all the ingredients until they form a compact and lumpy short pastry dough; wrap the dough in a film and place it in the refrigerator for half an hour. Add small lavender flowers to the mixture.
Roll out a sheet of dough (about a half cm high) with a rolling pin, shape the biscuits with the dough cup, arrange them on a baking pan covered with baking paper and bake them in a preheated oven, at 180 °C, for about twenty minutes.
