Sweet Courgette Fritters

The trumpet courgette fritters, have a rustic and tasty preparation, a variant of cod fritters, typical in the Riviera.
These courgettes of Ligurian origin have a soft and crumbly pulp and a particularly delicate, almost sweet taste.

Ingredients

Trumpet courgettes
100 g of flour type 00
Salt
Cold sparkling water
1 egg
Frying oil

Preparation

To make the fritters, prepare the traditional batter of frisceu, and add grated cheese, garlic and parsley. The flowers and the courgettes, cut into thin slices, are added to the batter. The dough obtained is fried in a pan with the oil, thus obtaining crunchy and tasty delicacies.
