Headcheese

The headcheese, also known as “soppressata”, is a cold meat made up of chopped tongue, fat, pork rind and cartilage of the pork’s head.

Its origins are ancient: the dough is cooked with laurel and rosemary, as well as lemon, salt and pepper, in special cauldrons and it placed inside wooden molds with the shape of a trunk (hence the Italian name “testa in cassetta”, which literally means “head in the box”). When cut, the slice looks like a mosaic of different colors that vary from pinkish white to red.
