Black Tomato of Seborga

The black tomato of Seborga is traditionally grown in the Municipality of Seborga, in the Province of Imperia.
The black tomato of Seborga is red, but during the ripening phase, which starts in July, it takes on an intermediate shade between brown and dark green. It is a very delicate plant, sensitive to climatic variations, which is why it is difficult to find them after August. They are medium-sized tomatoes, with a rather hard skin, while the flesh is not very compact. The taste however is very sweet, similar to a beefsteak tomato, but equally appreciated.
It is mainly used in the preparation of salads. The black tomato of Seborga is likely to disappear as it is little known and it is not largely spread. In the past, it was cultivated throughout Western Liguria and Seborga’s one was known as the best in the area. At the moment, it is possible to find it only in the markets of Seborga and surrounding villages in August.
