Biscuit of Lagaccio di Genova

It is the dry biscuit par excellence in the area of Genoa, suitable to be dipped in milk at breakfast time: its elongated shape is characteristic, as if it was a slice of a larger loaf. It takes its name after the area of Genoa located between the districts of Granarolo and Oregina, where, in the middle of the 16th Century, Andrea D’Oria had a dam built to supply his palace in the Principe district. People hated the lake generated from the construction of the dam and nicknamed it in a pejorative sense Lagaccio. This name remained in the surrounding area.
Here, in a pastry shop, the famous biscuit from Genoa and its surroundings was born and it was named after this place: very light, cheap and long lasting biscuit; also called “health cookie”.
