Two varieties of fig trees are grown in this area: the black figs and the rondetta figs.
In optimal conditions, especially when autumn comes, in September, figs begin to dry on the plant while remaining anchored to the branch. This is the best time to harvest them! Figs can be eaten fresh, or they can be used for jams and marmalades with a sweet taste.
The whole crop is exposed to the sun for a few days, on grids, creating a single layer. The figs, once dried, are stored in blanks created with the leaves, or inside pots, in dark and dry environments.
