Chinotto of Savona

The Chinotto is the symbol of the city of Savona.
The fruits, orange when ripe, small and slightly compressed at the poles, produce a very bitter and sour juice, from which the Chinotto drink is produced.
The processing of the Chinotto of Savona is often very long and difficult; the fruits are used not only for the production of the drink. In the Province of Savona they are often used for the preparation of sweets, or their peels are candied and covered with chocolate (such as orange peels) especially in the Christmas period.
