Albenga’s spiky artichoke is a variety of Cynara scolymus, grown and conditioned in Albenga and in some Municipalities of the Plain of Albenga. The planting period runs from July to August. Artichokes can be eaten either raw or cooked. One of the most popular ways of eating this type of dish is raw, dipped in olive oil with salt and vinegar, taking a single leaf with your own hands and putting it in the prepared sauce.
Once cooked, the artichoke can be prepared with oil, garlic and parsley in the pan or can be used to prepare excellent sauces and risottos!
